विश्वमा करिब १० प्रकारका रातो रंगका चामलहरु पाइन्छन् । ती मध्येको चिसो ठाउँमा फल्ने चामल हो मार्सी । मार्सीको अर्थ पानीजम्ने ठाउँ हो । पानी जम्ने ठाउँमा फल्ने भएकोले यस प्रकारको रातो रंगको चामललाई मार्सी भनिन्छ । कृषि अनुसन्धान केन्द्र जुम्लाका वैज्ञानिक डाक्टर श्रीप्रसाद बिष्टले उच्च पहाडी भागमा हुने रैथाने जातको धान नै जुम्ली मार्सी भएको बताएको पाइन्छ । मार्सी धान संसारको उच्च ठाउँमा धान फल्ने भाग छुमचौर (२७ सय ९० मिटर) सिञ्जा उपत्यका लगायत कर्णाली प्रदेशका हुम्ला, जुम्ला, मुगु र कालिकोटमा पनि उत्पादन हुन्छ ।
मार्सीको चामल परम्परागत प्रयोग:
मार्सी देवतालाई चढाउने, चाडपर्वमा खाने, पाहुना, कूल कुटुम्बहरुलाई सत्कारको रुपमा खुवाउने, बिरामीहरुलाई औषधीको रुपमा जाउलो खुवाउने, सुत्केरी अवस्थामा पनि तागत प्रदान गर्छ भन्ने मान्यताको आधारमा कर्णालीमा मार्सी चामलको उपभोग गर्दै आएको पाइन्छ ।
मार्सी चामलका फाइदाहरु:
नार्कका बैज्ञानिक रुद्र भटराईका अनुसार चिसो हावापानीमा स्टार्च नामक पोषण तत्व हुन्छ । यही चिसोमा फल्ने भएका कारण मार्सी चामलमा स्टार्च अत्यधिक पाइन्छ । जसका कारण मार्सीको भातले चाँडै भोक लाग्दैन । पौष्टिकताबढी हुन्छ । फाइवरको मात्रा बढी हुने भएकाले सुगर र प्रेसरको रोगीलाई उपयुक्त मानिन्छ ।
मार्सी चामल पकाउने तरिकाः
सर्वप्रथम मार्सी चामललाई राम्ररी केलाएर मनतातोपानीमा करिब ३० मिनेट सम्म भिजाउने । ३० मिनेट पछि चामलभन्दा अलि बढी पानी हालेर पकाउन सकिन्छ ।
There are around ten varieties of red rice found in the world. Among them, the one that grows in cold regions is called Marshi. The word Marshi refers to a place where water collects. Since this type of red rice grows in waterlogged areas, it is known as Marshi. According to Dr. Sriprasad Bishta, a scientist at the Agriculture Research Center in Jumla, Marshi is an indigenous high-hill rice variety of Nepal. It is grown in some of the highest rice-producing areas in the world, including Chhumchaur (2,790 meters), the Sinja Valley, and other districts of Karnali Province such as Humla, Jumla, Mugu, and Kalikot.
Traditional Uses of Marshi Rice
Marshi rice has long been a part of local culture in Karnali. It is offered to deities, prepared during festivals, served to guests and relatives as a sign of respect, and used as a nutritious porridge for sick individuals. It is also believed to provide strength to new mothers during recovery.
Benefits of Marshi Rice
According to NARC scientist Rudra Bhattarai, crops grown in cold climates contain a high amount of starch. Because Marshi rice grows in such conditions, it is rich in starch, which helps keep you full for a longer time. It is highly nutritious and has a good amount of fiber, making it suitable for people with diabetes and high blood pressure.
How to Cook Marshi Rice
First, sort and clean the rice well, then soak it in lukewarm water for about 30 minutes. After soaking, cook it with slightly more water than the amount of rice.
